Discoveries in coffee grounds.
IPB chemists together with Egyptian scientists recently took a closer look at various coffee products from the Middle East region. In a comparative metabolomics approach, they identified a total of 143 metabolites that accumulate in varying amounts in the beans of the Arabica and Robusta coffee species. They also analyzed different stages of roasting and quantified typical marker substances for both species. In the future, the results may contribute to the development of standardized quality evaluation methods for local coffee varieties
